The first year I joined a CSA (way back in 2013!) I had no clue what to do with all of the greens you receive in the early part of the growing season. Googling “how to use lots of dandelion greens” introduced me to saag! Saag is an Indian green curry that can be made with spinach, mustard, or dandelion greens. I’ve made it the traditional way on the stovetop, but prefer the quicker method in the Instant Pot on a weeknight. We prepare our favorite saag with spinach, shallot, fresh garlic and ginger and serve over cauliflower rice with chicken. It uses up a TON of greens... this recipe used 10 ounces of spinach for four servings. And it’s one of the most delicious way to eat your greens, in my opinion! #springveggies #eatlocal #spinach

I make it a bit more accessible by using prosciutto and salami instead of guanciale. If you want this to be a little lighter (but still delicious), you can halve the amount of butter. It’s a simple dish that comes together in minutes and it really lets the veg be the center of attention. #springveggies #sugarsnappeas
11 months and two weeks ago we lost my beautiful aunt years too soon to this horrible virus. I’m missing her extra hard today. The reality is that while our grief is personal, it isn’t isolated. She was one of the 550,000 Americans that we collectively lost this past year. I hate where we are, but I feel like things have to get better from here. This small step feels like hope.
