Blueberries never seem to get enough credit in my book. Strawberries are the earlier berry that everyone is excited to see and blueberries seem to get lost in the shuffle when they come in season a few weeks later into summer. Where we live in Wisconsin, we source many of our blueberries from Michigan. I ordered 5# from our local farm stand this summer and immediately froze them. I’ve been thawing them to enjoy over the past month in a variety of different recipes… and several cocktails.
A quick hack for freezing blueberries – do not wash them! Freeze as they are – DRY – they’ll all clump together if you wash first. After you take out of the freezer to use, give a quick rinse to clean them.

This recipe comes together quickly, with a buttery shortbread cookie crust that par bakes first and a creamy blueberry custard topping and crumble on top of that.

The beauty of this salad is that you can only really enjoy this during the short, short window when both peaches and blueberries are in season. I loved how crunchy the pecans and frisse lettuce were in this recipe!
